Recipe: Basil Mushroom Ragù on Toast

This is a quick, easy and amazing dish that you can serve on toast, as a side with steak or even on top of a salad. Its a great egg free breakfast option or a middle of the day snack.

What you’ll need:

2 handfuls of mushrooms sliced

4 bacon rashers cubed

1/2 an onion finely chopped

1 stem of spring onion sliced

1/4 cup of basil leaves chopped

1 tbsp of butter

50 gms of feta to crumble on top (optional)

  1. To a hot pan add the cubed bacon and let it cook for about a couple of minutes.
  2. Add the chopped onions and sweat in with the bacon for another couple of minutes.
  3. Turn the heat to medium and add the butter and mushroom. Cook for a minute.
  4. Add the chopped basil and the spring onions. Cook for a minute and turn the heat off.
  5. Toast a couple of slices of wholemeal bread and spoon the pan mixture on top, OR
  6. For a gluten free option: Toss some lettuce leaves in a salad dressing and add this mixture to it.
  7. Crumble fresh greek or danish feta cheese on top.
